Strawberry blondie with the tang of Lemon

These Strawberry Lemon Blondies are filled with fresh strawberries and a kick of lemon tang. Quick and easy to make, these indulgent strawberry blondies use just everyday ingredients.

Bright and tangy with little pockets of jammy baked strawberries, these strawberry lemon blondies are a gooey, indulgent treat and a must-make. Topped with a strawberry icing, the flavour is incredible.

This strawberry blondie recipe is so easy to make from scratch! With white chocolate chips, fresh strawberries, and a slightly tart lemon flavor these blondies are the perfect summer dessert for your next potluck or picnpicni


You will need:

1 1 cup salted butter, softened

2 ¾ cup granulated sugar

3 ¾ cup light brown sugar

4 2 large eggs

5 ¼ cup fresh lemon juice

6 Zest of 1 lemon (about ½ teaspoon)

7 1 teaspoon vanilla extract

8 1 teaspoon lemon extract

9 2 ¾ cups all-purpose flour

10 teaspoon baking powder

11 ½ teaspoon salt

12 2 teaspoons cornstarch

13 1 cup diced strawberries


Strawberry Lemon Blondies

1 Preheat oven to 350 degrees

2 Line 7 x 11 inch or 9 x 9 in pan with parchment paper

3 Mix together dry ingredients (minus sugar) in a bowl.

4 In the bowl of a standing mixer or hand held mixer, cream the butter and sugar on medium for 2-3 minutes, until it is light and fluffy.

5 Scrape down the sides of the bowl with a spatula and add the egg. Mix until incorporated. Then and lemon juice and continue mixing, pausing to scrape down the sides a few times. It might look curdled, this is normal.

6 Add dry ingredients to wet ingredients and mix until combined.

7 Remove the bowl from the mixer and gently fold in diced strawberries and chocolate chips with a large spoon or rubber spatula. It might look a little pink but this fades when you bake it.

8 Pour mixture into prepared pan and spread it around, pushing towards the edges and making the top even.

9 For a 9x9 inch pan bake 30-35 minutes and for a 7x11 inch pan bake 35-40 minutes. Try not to overbake them. The edges will be brown and a toothpick will come out clean when you pierce the middle.

10 Let them cool on a cooling rack and make sure they are fully cooled before you add the glaze.
